Anj. I went to South Africa a medium rare person and came back a rare person. At least as regards fillet. Not sure if it works with other cuts. But basically you need to let it rest for yhe same time it cooked. Worked perfectly tonight. I tried to recreate the amazing steaks I had in Cape Town and tbh was quite chuffed with the results.

Weirdly H, I messaged another close friend last night who is besties with the lady (Helen) who sadly passed away. She reminded me that the last time we were all together was on my birthday 12 months ago. I looked through my pics from the time and came across this selfie taken on the night. Helen is sat in front of me. I have known the 3 ladies in this photo since I started working with them in 1980, so we go way back.

I too believed we’d win 2-1 , that we’d sneak in a goal in the last minute so they couldn’t come back at us . If we’d have led for too long they’d have been swamping us. , happy with 2-2 in the end
