Don't think he's dead, he's just too important.

Ghost is around, Melisandre is around, the 2 combined should see him come back to life in some variety. Maybe he'll warg Ghost or Mel gives him the kiss of life thing or both.

Jon technically dies, so his watch is over. He's resurrected and is no longer bound by oath to the Watch. Turns out this was Melisandre's plan all along and Stannis was her means to an end. Jon is actually Azor Ahai reborn (at least in part). The free folk and Stannis' defectors witness the resurrection and swear fealty to Jon.

Spoiler: Yes and no really

Think you've read the books so you've read her chapters; Mel 100% believes everything she says about Stannis etc., she's just really stupid and terrible at translating her visions. So I don't think Stannis was a means to and end in her eyes, but the eyes of whoever/whatever was sending her the visions.
