I actually said that too mate, I agree with you Doucoure and Beto lack composure that is as big as pace. But also Garner doesn't playmake much, Harrison has one assist, Mcneil is slow but can deliver a ball, Lindstrom hasn't produced and isn'trapid. Ndiaye is the one of the forwards I would keep as you say he is quick but also has composure and dribblings skills when he is fully fit.Forest's and Palace's wide players are also technical.
Main reason our counters break down is not pace but poor decisionmaking. You could have Usain Bolt in his prime and it wouldn't help when the guy with the ball either doesn't pass to him to misplaces the pass. Since Moyes has come in, I haven't thought pace is the issue, we have had promising looking counters with our players getting forward and then Doucoure or Beto looses the ball when it looked easier to pass to a free teammate.
N'diaye is quick enough but again, doesn't help much if we can't play to ball to him in space. He also has technique and ability to go past his man.
