What happens when all the panic and hysteria is over ?

These items people are hoarding are obviously in major demand. You want that say about supply and demand.

I guess the prices are going to go up.

Then we'll have more panic and hysteria.

Some of the scientists and medical profession also have an ulterior motive in hyping this up, as it'll likely lead to more funding etc.

Food will not run out in Europe.

Sad to hear the news of a 59 year old former police officer dying from the virus. It said he had underlying health conditions due to a previous heart attack (& what caused it obviously) but it gives a stark warning that this disease is ready to finish off anyone who is not in the best of health regardless of age.
