What's the local specialities?

Memphis is BBQ and Blues. I don't have any specific recommendations (I'm sure you'll get great personal stories from those that have them), but you can do much worse than heading to Beale Street and looking for both. Have fun.

However, before Chico starts telling stories that never were, here are a few decent reads:

Then, for the real deal, head north to Wild Bill's (1580 Vollintine Avenue), an urban juke joint, where people come to dance, drink 40oz (two-pint) beers, and eat late-night chicken wings that reduce the belly's sloshing when you lie in bed. (You can bring your own harder spirits for a small fee.) The room glows with red Christmas lights and the memories of cigarette smoke, and the revolving band (often featuring members of the Hi Rhythm Section, who played on Al Green's hits) is as likely to play Elmore James as James Carr, Otis Spann as Otis Redding.
 
Thanks in no small part to The ESK (or my nosiness, maybe) I went to Shane's, probably our best local BBQ, for The Blink (chopped beef w/hotlink sandwich).

Casinos? I think I could spend three days in Memphis within a two-block area.

Convention, actually. Parties, etc at the house of locals (old school friends) who lived in MS, etc...

I was subject to the kindness of strangers that week for transport, as well. Worked out great. Nice people. I smile every time I think about that trip. Love those dry rub ribs, @the esk. Just saying.

Memphis is less than an hour from me.

Specialties are probably BBQ ribs and cole slaw.

Graceland (if you love that kopite Elvis) and Beale Street are probably the biggest tourist draws.

Rendezvous downtown is the most famous rib place in the South U.S. Located down an alley, but good food.

Gus's World Famous Fried Chicken is great and also near downtown.

Bar B Que Shop in mid town is great casual BBQ. Try the BBQ spaghetti.

Dyers on Beale Street has wonderful burgers.

Hueys is downtown and pretty great sandwiches.

Flying Fish if you want American seafood.

Flying Saucer if you want a pub with hundreds of beer and cider on draught.
