I put bacon on top, but don't chop mine up. Some folks don't want it, some do. The important factor is the 50/50 ratio of onions and beans, in my reckoning. Add Maple syrup and a proper shot of lea and perrins (about a quarter cup for me) and cook em low and slow. I don't know how crunchy the bacon will get, as I think about it more.
As the weather gets cooler, the baked beans look better and better.
