Maybe I've not had it cooked properly - I enjoy fish barely cooked (actually enjoy meat barely cook as well).

Hot smoked mackerel is a great favourite, maybe I should try the same with salmon.
Give it a shot. Grilled salmon is one of my favorite meats. Never tried smoked mackerel though and not sure I can find it where I am currently.

So shallow frying as opposed to the fully immersed version......I see.
 
Have a look around mate...there are some very good BBQ places. There's a newish one in Fremont that touts itself North Carolina BBQ (it opened after I left, so can't be held accountable if it's sh!te).
Yeah, I need to get to that one, I've seen it, just haven't gotten over to Fremont to try it out.

I want to be specific when I say I miss BBQ - I miss NC BBQ - preferably Eastern NC BBQ (although Piedmont style is wholly underappreciated). That's a super rare thing anywhere but NC, I realize that. But I miss it's vinegary delight. KC/Memphis/Texas BBQ? Meh, that's fine, but it's not my jam.
