Salmon tacos:

4 salmon fillets (blackened)
1/4 head of cabbage (shredded)
1 cup mayonnaise
1 tablespoon of chipotle pepper purée
1 tablespoon of fresh lime juice
1/4 cup parsley or cilantro (finely chopped)
Salsa
2 cut lime wedges
Soft taco shells

Grill the salmon fillets and let them cool. Combine the mayonnaise, pepper purée, and lime juice in a small bowl. Flavor with salt if necessary.

Flake the salmon fillets, then spread the chipotle mayonnaise over the taco shell, and top with the cabbage, cilantro, and salsa.

Sorry salmon is only good served as sashimi or when traditionally smoked - never liked cooked salmon.

Properly grilled salmon is fantastic. Utterly amazing. Bought a full fish at Pike's Place soon after moving here and filleted/grilled it with a hint of dijon...possibly the best thing I've ever eaten.

I've had some terrible cooked salmon, but it can be great grilled (and cooked other ways too). Really, with salmon all that matters is if it's fresh. Hard to ruin fresh salmon.

Maybe I've not had it cooked properly - I enjoy fish barely cooked (actually enjoy meat barely cook as well).

Hot smoked mackerel is a great favourite, maybe I should try the same with salmon.
 
Why don't Americans do proper cheese? It's like squeezy stuff out of a bottle over there, the freaks. Get a proper extra mature cheddar, dead crumbly and stop fancying about.

It's easy to screw up salmon - overcooked, oversmoked, dried out. Bleah. Just salted, peppered, and sauteed in some nice oil/butter is outstanding. Don't get in the way of the fish. Did I mention not to overcook it? A friend in the seafood biz got me some lovely arctic char last year that I cooked up as described and I don't think I've ever had anything better, ever. Food for the gods. Squeeze of lemon, cold butter, caper sauce from the pandrippings...

Fair point; when I worked at a restaurant beards ago, there was an order option for cooking the steaks "hockey puck."
