I made this yesterday substituting veg for tomato soup. They weren't bad at all, no taste of the soup. Handy if you don't/can't eat butter/marge. I did ice them, which uses butter, but you don't have to do that.I made far too much veg soup and have loads left over. I was wondering what to do with it, and I came across this :
Chocolate muffins
Makes: 12
Ingredients
Dry ingredients
2 level tsp bicarb
2 level tsp baking powder
80g sugar
225g plain flour
75g cocoa powder
100ml milk
80g chopped dark chocolate
200g chopped white chocolate
Wet ingredients
3 medium eggs
1 tsp vanilla extract
100ml skimmed milk
400ml tomato soup
Method
1. Pre heart the oven to 180c gas 4
2. Mix the baking powder, bicarb, flour, cocoa powder, sugar and chopped chocolate - really well
3. Mix the eggs, vanilla, milk and tomato soup really well
4. Add the egg mix to the dry flour and mix lightly
5. Spoon into the muffin cases and pop into the oven and cook for 15-20 minutes, do not overcook or the muffins will be dry
6. Once well risen and soft to the touch, remove from the oven and cool
Definitely giving it a go, and will let all the people on tenterhooks know how it turns out.
