Even though all votes have been counted there, because it's so close (20K votes), no way they can call it until there's a re-count, which is pretty standard procedure when it's that close
Wisconsin officials have said they've got like, maybe 300 votes left, but it's all done bar that. However, they don't clarify the result until Dec 1

To be fair I actually think the Electoral college makes for a more competitive system than the UK’s. We’re looking down the barrel of 15 years of conservative rule, if not 20 years so I don’t think we can really get high and mighty about it

Not really - we were warned well in advance that Democrat voters had overwhelmingly chosen to vote from home due to the ensuing public health crisis (and to a far lesser extent, the warnings of Republican 'poll watchers' and potential violence or intimidation).
Furthermore, it takes longer for urban areas with a far more dense population demographic to count their total ballots, and never has the vote been more divided upon urban-suburban lines than in today's political climate (hence the heavy Biden swing).
The votes which came in late last night all came from jurisdictions (Milwaukee, Green Bay, Kenosha) where absentee votes are counted in a centralised manner rather than in the polling station most local to the voter - this is simply their law and not a policy decision (a publicly observable process with challengers there throughout at local, county and state level)
