I was thinking of cooking whole chickens and just snacking on them, bit cheaper than cooking chicken breasts, but they are packed full of protein!

Any will do mate, mixed with raisins or whatever. Have a look at the calorific content on the back of the packet. As soon as you'll start building muscle mass you'll automatically put on weight as muscle is heavier than fat.
That's my excuse on the scales anyway mate.
