Fajitas are delicious. Enchiladas are too.
You're eating gringo food lid, so it's your own fault.
Swap them enchilladas for some quesadillas to start then go straight onto arrachera tacos with maiz tortilla, or al pastor if you're wanting to sex up your taste buds.

I prefer fajitas because you can get stuck in with your hands but enchiladas are superb too, bit more diverse and the fact you can add tons of cheese helps. You could also put cheese inside the enchilada and coupled with the cheese topping enjoy double cheese. I think in the space of a few words I've persuaded myself I prefer enchiladas.
On a similar note, if ever in Tuscon, AZ and feeling peckish for a burrito...
