Enchiladas Appreciation Thread

I made enchilada's the other night.......wife moaned because it creates a bit of a clean up. Moaning stopped when she started eating them.

Its been a while since I ate Tex-Mex.

This must be corrected. Used to make my own guacamole too, with proper chilli, I'll have to have a go again.

This weekend I had a Pablano pepper stuffed with cheese, fried in egg, and covered in enchilada sauce.

It was like the pepper took the place of the tortilla.

Excellent.

That would be called a Chili Relleno for those in the know.

Local Americanized "Authentic" Mexican Restaurant is serving something called the El Valle Special:

4oz skirt steak
4oz chicken breast
2 cheese enchiladas
salad
rice
refried beans
tortillas

I have to say there is nothing more unnecessarily American (and delicious) than using a cheese enchilada as a TOPPING.

Had some enchiladas last week at the local Ma & Pa mercado. They were okay. Served with some sort of dark onion sauce I'd never had and carne al pastor.

Not sure whether to vote enchiladas or cheese on enchiladas since I do appreciate them with some cheese on top.
