Cilantro, indeed.

For the record, I never put black pepper or olives in my enchiladas. I see that both of those ingredients are in this recipe.

My advice is to substitute a mixture of cinnamon, garlic, and cumin for the black pepper and either green chilies or hatch chilies for the olives.

I actually had vegetable fajitas for lunch. Squash, zucchini, and mushrooms with the classic peppers/onions/tomatoes combo. Garnished with pico de gallo, sour cream, and guacamole. Tasty.

I had some vegan ones for tea.

Roasted chickpea, broccoli and red pepper filling with avocado, spinach and my own salsa.

Should? Probably not, but I add it to salsa all the time.
