Chitlins are definitely an American food, and you can go to @Basil Fawlty on that. For better and worse, this is a heritage of American slavery (probably all fried foods, in some measure).

That's what I meant, mate. Wasn't disqualifying chitlins as American, just noting the root of that dish.

Was amazed at how familiar the food in America got the further south I went.
 
I've never had oysters!

Oysters are like when you swim in the sea and a wave dumps you and the seawater goes up your nose and washes a big booger down your throat. Only more filling. And delicious with black pepper, lemon and tabasco, but can't ever bring myself to chew.
