a salute to our northern neighbors - shortrib poutine from our local Black Sheep restaurant.

Had two recent poutine experiences while in Canada. Duck meat poutine in Quebec City- amazing. Poutine-flavored potato chips (crisps)-- an abomination of the highest order

Here's what I was looking for to start with. Same restaurant, braised short rib with blue cheese bread pudding. That's an onion garlic soubise under the meat. Another one of the 10 best things I ever ate.

Chitlins are definitely an American food, and you can go to @Basil Fawlty on that. For better and worse, this is a heritage of American slavery (probably all fried foods, in some measure).

I don't know much about the merits of that suit, but I know that if Aunt Jemima's on the label, my pancakes taste better
