Is Old Bay the Zatarain's of the East? Looks strangely similar.

Well, of the Mid-Atlantic. It is to Chesapeake bay what Zatarain's is to New Orleans.

No Old Bay means no crab cakes. For a Blue Crab boil like we do down here, we use Zatarain's.
 
Cut an eggplant in half and soak it in a bowl of water for ~30 minutes. Heat up some oil with minced ginger and garlic then add some chopped sichuan peppers and red pepper powder to make the oil red. Brown some ground beef in it, then add some coarsely chopped tomatoes and tomato paste ( I do a tbsp but add to taste). Cook for about five minutes and then add chopped parsley and salt and pepper to taste.

Remove the eggplants from the water, season them with salt and pepper, then fry them in coconut oil until the entire eggplant is browned. Scoop out the seed parts of them leaving a groove, then put the meat filling inside the groove. Garnish with another hot pepper and thinly sliced tomato, and bake at 400 degrees until the eggplants are soft (20-30 minutes).

If you're not a tofu fan, use it with a pound of ground beef. Heat oil and minced garlic and ginger in a pan, then brown the ground beef leaving it a little pink. Add some red pepper powder and cook for another two minutes, then add one of the little sauce packets and stir. Once he oil has turned a deep red, add some chicken flavor powder and salt and pepper. If there is too much oil, throw in a little corn starch water. Cover it and cook on low for about 10 minutes. Garnish it with scallions and serve over rice.

If you're a tofu fan use a pound of tofu and 1/3 a pound of beef. Add the cubed tofu after you add the sauce and stir gently. This sauce also makes a good marinade. Still working that recipe out.
 
Just got back from the store. Saw these...had to give them a try:

Sadly they don't taste of bacon or maple...just kinda salty and sweet.
I was also tempted into buying a bag of these. Agree with your summary---they weren't bad just didn't taste anything like maple or bacon. If I did a blind taste-test would've assumed they were barbeque
