Regardless what you put inside of it, to be a po' boy, it needs to be made with a baguette type bread...crisp crust with nice soft center.

Here, they are almost always french bread with something fried.

I had one with boiled shrimp and fried green tomatoes recently. Really bizarre gourmet take on the po' boy.

I love old bay on tilapia. Also: lemon juice, butter, and hot sauce= awesome coating for tilapia. Just melt the butter in the microwave first then add the lemon juice and hot sauce appropriately to taste. I used Frank's hot sauce because you can use a lot more of it vs lemon juice. Note that I have a very high tolerance to spice. I'm also buzzed so I cannot give exact measurements.
