So what's the deal? From what i've heard meats are generally nicer over there but they have no clue about cheese, right?
Absolutely a myth regarding the cheese.
True. Craft cheeses are becoming as numerous over here as craft beers. We just eat them all and keep our little secrets.

There is a cheese we call 'American Cheese'. It's about as low brow as it comes in the cheese world.
However, we make cheeses from around the world...and do some of them just as good if not better. It's kinda like how we caught and surpassed France in wine back in the 70's.

Whenever I'm at Subway, which admittedly is not a high-quality eatery, and I'm asked if I want "American cheese" on my sandwich I have to work hard (and usually succeed) at responding, 'KOFF 'MERICAN (not unlike 'KOFF OSMAN...)
