Way back in the day when my grandmothers were still doing the cooking, Thanksgiving was turkey and Christmas was ham. So a good morning after Christmas breakfast was leftover ham on biscuits....usually fried with a warm biscuit....

I'm sure many are crying out to slap some cheese on that, but I preferred fried with butter and honey in the morning

Ham I am. That last one is killing me. Here's the double down Ralphie deluxe from Maple Street Biscuits.

(two over medium on sausage gravy on biscuit) Tastes better than it looks. World class sausage gravy, here. Not more than once a month.
