I had an argument with an English teacher about that a few weeks ago. She insisted its Everton IS top of the league as it refers to a singular team but a football club is referred to as plural as it is a collective term.

'They are referred to as a plural' By the fans in general (including me). But the grammatically correct form is 'Everton is top of the league'.
Everton is not a colective noun really. Only in our perception as fans because we identify with the group of players.
