What Did You Last Eat Thread


'Bout to throw some pork tenderloin in the oven; will then be sliced and diced to be used in burritos, along with lettuce, some balsamic roasted bell pepper strips, poblano strips, a little crema Mexicana, some shredded lettuce, diced yellow pear heirloom tomatoes from the garden and cheese.

Mouth's already watering, I've only had 3 eggs today.

crema Mexicana = heavy* cream (double* here), butter milk, lime juice, salt. I'd probably go old school with chopped chives through soured cream.

Not supposed to have any dairy (high in potassium and phosphorous, no-no's for CKD sufferers), I'm already using some decent (for vegan) cheese but cheating a bit with the crema. Salt is already in the pork rub along with garlic and a few other herbs but used lightly.

So we all know what's NOT in this recipe, so maybe it's time I told you what IS in it?? No problemo baby! Here's everything you'll need and plot twist: IT'S A REALLY SHORT LIST!

  • Soy Milk - unflavoured and unsweetened.
  • Vegan Yoghurt - the thickest variety you can find. I use Coconut Collaborative because it's unsweetened and unflavoured too.
  • Lemon Juice - for a gentle sweetness and tang.
  • White Wine Vinegar - for that "sour" vibe in your vegan sour cream (not sure why I didn't include this in the photo above. Forgive me please).

Ya'll do vegan better in Europe, costs an arm and a leg to eat healthy here ('Merica!) plus healthy alternatives (like the coconut yoghurt) are easier to find in specialty stores like Sprouts and WholeFoods but, like I said, costs are stupid, like REALLY stupid.
 
Elizabeth Taylor apparently once asked to be taken down to the kitchen at the Dorchester to tell them how to cook\prepare baked beans.

Her ingredients, but not quantities were baked beans, crushed crisps, crispy fried onions and muscovado sugar; all mixed and then into the oven.

I did it about three hours ago. It was a bit dry so I'll put some passata in next time. If there is a next time.

Started preparing last night
Boiled ribs up
Presoaked Lentils & split peas

This morning boiled all up adding 2 big leeks , 2 onions and carrots.

Once made ribs back in and stand til tea time .
Served with nice thick crusty bread.

Its that time of year again ;)
