Creamed spinach with garlic and nutmeg
Okra as bindi or creamed
Ratatouille, done in the style of a Bouillabaise, and add some Pernod.
I'm hungry now.
 
I like many vegetables, (though there are a few that you couldn't pay me to eat)
As for "favourite vegetable" though, that would really depend on which type of juicy animal flesh it's accompanying.
 
Serious question; Any tips on getting a 10year old to eat some without a daily shouting match
Make a cottage pie and bung some veg amongst the mince and gravy. To top, instead of potato, use celeriac or parsnip. Or, a combination of both, or if you're a bit doubtful add a couple of spuds with them. You could also add a carrot or two.


 
Big fan of broccoli, especially the tender stem stuff. Asparagus also with a splash of balsamic ?

My younger brother wouldn’t eat any veg at all when he was a kid (still hardly eats any, it’s a wonder he hasn’t developed scurvy tbh) so my mum used to use a cheese grater to grate bell peppers and carrots etc. into any sauces or stews she’d make (like bolognese etc.) so he couldn’t spot them.

As opposed to my favourite vegetables, mushrooms are my absolute worst. They're absolutely vomit inducingly disgusting. I have to cut them up small and mix them with other stuff to force them down.
