Roasted Aubergine with capers, white wine vinegar, olive oil, lemon zest and pine nuts. Sprinkled with fresh parsley or oregano.

Beautiful.

Jerusalem artichokes are ace also.

Does all parsnip do this? We have a plant called will parsnip which does this. The oil breaks down the ub protection in your skin and you get massive blisters and burns

Bell peppers, onions, asparagus, broccoli, sweet potatoes. Can eat those all day.

Forgot to mention Jersey Royal with butter and mint, lovely.

Onion, garlic, shallot, leek, spinach, green beans, pretty much any beans really, parsnip, swede, carrot, beetroot,cabbage, lettuce and cauliflower are all good. Probably a load more too.

And of course the humble potato.

Like tomatoes, they're a type of fruit - the seed bearing part of a flowering plant. @Billy Dean a pumpkin is a fruit too.

@Alanbileysfeathercut mushrooms are vegetables either as they're from a different kingdom. Feel like I'm pissing on everyone favourite vegetable bonfires here.
