Why are France like this? Secularism to the extreme?

Well it's not just a fashion item is it.
It is often worn due to religious pressure from family;
The secular state is part of the constitution and often caused problems for christians too.
For example local mairie cannot exhibit nativity cribs on its premises.

Why fight against this kind of banner tho?

If you had told me 20 years ago that a major NGO would be running pro-Islamic propaganda, I would have laughed in your face.
Just for clarification, you think Council of Europe is running a pro Islamic propaganda? Why no country other than France objected it then?

This is undoubtedly pro-Islamic propaganda. Break it down this way - the Muslims in Europe are starting from a poor social position and the NGO is trying to elevate that. That makes the content pro-Islamic. The content is very obviously propaganda, by definition. It's pushing a social agenda.

As for why no one else objected, I can't speak to that.

The banners were designed to campaign against anti-muslim language/discrimination. do you have a problem with that?
No. Just because it's propaganda doesn't mean it's evil or wrong.

On a personal note: I like the idea of neutrality to the extreme, in schools & public spaces.
As do I. Unfortunately, I've been subjected to living in various swaths of America where people do not agree with me for the better part of thirty years now.

If it isn't wrong why are you then surprised?
Because twenty years ago the Twin Towers were knocked down, we collectively went to war and we went way down the rabbit hole of demonizing the enemy? There was no way to conceive of the notion that twenty years later prevailing elite opinion would be that corrective action is needed, given context at that time.

The problem is it isn't 'her choice' though, because too often if she 'chose' not to wear it she'd be in deep trouble from some quarters.

A 'choice' would be choosing whether to wear sunglasses or something; not something intrinsically tied to religion and honour.

Good on France; secularism shouldn't be the thing seen as weird here; the idea of someone having to cover their hair so as to not offend a magical entity should be.
