Katsu means cutlet, tonkatsu for eg is pork cutlet. Loads of places now called the curry sauce 'katsu sauce' when it's not. The sauce for the pork cutlet is more of a brown sauce type thing

I have read somewhere that Japanese curry sauce was invented during the war when British soldiers brought over curry powder as there wasn't a 'curry' in Japan at the time, which kind of would tie into what you heard too
Yup. When I used to travel to Japan for work, Japanese colleagues took us to a restaurant specializing in tonkatsu. One of the best meals I had over there. Each person got a mortar and pestle to freshly grind sesame seeds to add to the tonkatsu sauce
 
relatively low in salt, packed with sugar, pricey but great on chicken.

The Chef at my local Indian always gives me free poppadoms, thought I'd give Lime Pickle a try instead of the Mango Chutney & he said I would like it, its not for me but I won't crack on next time I'm there.

It is often very powerful, so if you splurge it can drop you. It's a palate cleanser really, to shift the mango and ketchup onions onward.

apparently sainsbury's carry the chili crisp, someone was on saturday kitchen or similar raving about it a month or so back. how do you use it? cook it in or use as a garnish or a sauce like ketchup? mild or hot?
Can lash it on almost anything as a condiment, then you can cook with it too, generally egg based things like a twist on shakshuka etc in my experience, but I’m sure there will be other recipes that use it.
Literally just had scrambled eggs on toast with crumbled feta and that on it.

I make a lime, scotch bonnet, wine vinegar, salt, sugar and pepper marinade, for chicken, (1 part marinade to 6 parts yogurt, cover
chicken and refrigerate for 24 hours cover bowl it's in) (I lemon and salt brine the chicken before the marinade). Anyway, the marinade neat is great on the bbq. specific to a bit of steak or some chicken (on the bone is best).
