Is there Pineapple in a Hawaiian Enchilada ?

No idea. But if I were to make pork enchiladas, I'd consider adding pineapple to my salsa or pico.

No. I am a heretic. Enchiladas are perhaps 3rd or 4th on my "Taqueria" Mexican food list. Depends on whether or not I want to knife & fork my way through an Enchi or just have the mobile convenience of a straight burrito. I avoid Mikey's Chimis, as, at least here, you get enough calories to feed half the indigenous peoples of the Chaco for a week from just a straight burrito before deep frying it.

2. Breakfast burrito. Personal fave is just eggs, bacon, cheese, potatoes with some salsa rojo. Had some with mushrooms or green chile (hatch chiles) which are also great.

1. Fajitas.

Just something about that sizzling platter and wrapping up grilled meat, pepper, and onions (and sometimes mushrooms) in a nice, toasty tortilla and tucking in. ZOMFG.

I do enjoy breakfast burritos with hatch chiles and some leftover stewed beans.

IDEA: breakfast enchiladas. I could prepare them like savory little crepes.
