so, I'm not super up on my legal knowledge but does a grand jury decide what a person should be charged with as opposed to a trial jury who assess guilt or innocence?
If so, is it the case that a New York state grand jury will get trumps taxes to see if he should be charged?
Anyone got any idea how long that process takes? Are grand juries findings made public?

A grand jury is the precursor to a trail.

It is where a prosecutor must convince a jury that there is enough evidence to reasonably meet the threshold for them to peruse a prosecution - it's not the trial.

Am guessing that by sending both cases back down to lower courts Trump’s info will not be made public before election.

Heard an analysis of it on NPR this morning (pre-ruling) and even if SCTOUS didn't refer it back to lower courts, any records would have had to go to a grand jury first so still not public before an election.
