Social round on Christmas eve, smiling nicely at some right tossers. wishing people seasons greetings and then glad to see the back of them. I'll be getting the meats ready for burning the following day. I used to get rat arsed in preparation for midnight mass, can't drink and don't bother with masses these days so life is far duller, could come and join you in Guadalajara Chic's
 
What does christmas in Mexico entail, other than Tequila?

Do they smash a straw man to bits with a stick or something? Pinata?


Yes they do so little kiddies can come and pick up the sweeties inside it..............................paedo's or what

Given the chance I'd be over in a flash but its down to me this year, as always, to do all the cooking............................the wife doesn't realise what a gem she got when I married her :D

I picked up a lovely big rolled venison haunch from Ludlow that I'll be roasting, can't wait.

I picked up a lovely big rolled venison haunch from Ludlow that I'll be roasting, can't wait.


Very much a traditional meal roast turkey, ham done with cloves and a honey glaze, roast belly pork, star scored for super crackling, pigs in blankets and stuffing balls and the usual veg. Should work out at 10,000 cal per plate followed by Christmas pud crusted by burning rum, it will be served with a choice of rum butter or sauce englais...............I normally do little else other than fart a lot after eating that meal

Tell me about the star scoring.

Its quite simple normally a butcher will only scrape the skins surface so get a really sharp knife or Stanley blade and make lines diagonally across the joint, when done turn the joint round and do lines in the opposite direction making star shapes, you must make sure that the hide is sliced through, but not too deeply. This allows more fat to seep out during cooking thus producing a better and more manageable crackling. One big tip, scald the hide before you put it in the oven then rub sea salt into the stars................it will be perfect. You can also add marmalade which produces a sweet carramelisation especially if being done for a Chinese banquet.....try it is superb

Chances are i'll be at home on my own doing the same as i do every other night.

With the added bonus of knowing i'm avoiding all things christmas-ey.

I [Poor language removed] you not. I'm sat here with a superman pinata next to me, I've been to my mates lads birthday party today.

How weird is that.

Similar to Spain, they give presents on the Epiphany.
