American Food

It's hard to argue with this, given in part to the complexity of these terms, so I'll defer with a few caveats:
New Orleans food is great, but Acadiana > New Orleans > non-Louisiana cajun and creole cooking
I don't care what color is their skin or how they identify, if they're from this area, they can cook
Get a map of Louisiana. Put a pin in Lafayette and measure out from there.
 
Painting with broad strokes here, but Creole cooking techniques allow for a little more subtlety on my palate.

Cajun dishes, in my experience, have generally been bluntly spiced.

Etoufee variations are the example that jumps out to me at the moment.

I think Cajun food is sometimes all seen as blackened this and blackened that. While this can be good (and it was created in New Orleans by the Fat guy), it's not all that Cajun food is.

Any of you delightful colonial types got any recommendations for places to eat in San Francisco, San Jose, Los Angeles and San Diego? Mrs Tree has just informed me that we're going on a family holiday to California with her parents and highly irritating siblings.

NB no vegan / vegetarian rubbish please, and definitely nowhere that stinks of coffee.

So any preferences? Cali in particular will have everything from everywhere. Got friends in/near a couple of those places ... though LA so freaking huge that recs might as well be like heading from Liverpool to Manchester for a lunch.

Anything that might be regarded as a speciality for the area? Mrs Tree and I are professional carnivores, both like seafood, both like bbq, thai, chinese, japanese, french, italian... very little I can think of that we wouldn't try. She's allergic to cheese and neither of us like coffee, tofu or American bacon but otherwise we're good.

Well, shouldn't be hard. And imagine their Mexican food will be absolutely stellar as well.
