I've used rendered pork, bacon and beef fat in cooking for years

Southern US cuisine is as entirely built on bacon fat as French is on butter and Italian is on Olive Oil. I have a version of that bacon fat picture in my fridge right now. Covered with Sarah Wrap and a rubber band.
