American Food

I have not really made anything worth mentioning. My meals have been really boring lately due to a drought in my appetite. I need something to bring me back to life. Like a good beer cheese recipe.
 
Sure is quiet in here lately...

Anyway, here's what my New Year's will look like.

May the certain good fortune it brings me be visited upon us all as well, especially our back line in its time of need.
this is a bit like a jambalaya is it ? can I spy different meats in there too ?
 
Just to balance the plethora of American eats, here's one of Spain's favourite breakfasts. Had this this morning at a market stall - Delicious!

Next to it was a fantastic clam omelette.

Bit of crusty bread for the sopa, por favor. Noms. Sopa, si; tripa, no.

I did try it. Once. Too much other really good stuff nearby to give it much of a go. Mexican version, anyway...

I'd smash that clam omelette instead.
 
Outstanding carlos mate. Cooking up a pot of black eyed peas for New Years and it smells fabulous here - I'm using the world's best bacon from Tennessee, a Christmas gift from friends. Hope you are good - have a terrific new years mate.

Martinez would say it smells phenomenal.

How to use a restaurant review as a filet knife. Heh.

The kitchen could improve the bacon-wrapped cylinder of quail simply by not placing it on top of a dismal green pulp of cooked romaine lettuce, crunchy and mushy at once. Draining off the gluey, oily liquid would have helped a mushroom potpie from turning into a swampy mess. I don’t know what could have saved limp, dispiriting yam dumplings, but it definitely wasn’t a lukewarm matsutake mushroom bouillon as murky and appealing as bong water.

I'd love to be a fly on the wall of their kitchen after this.

edit: found this under comments - In retrospect, we now know the first incidents preceding the revolution were seen at Per Se. Servers argued with diners about the wine, dropped napkins were allowed to remain on the floor and mon Dieu, the lobster could be gristly. The 400 began to worry about their safety with good reason. A date began to be chalked on the sidewalks outside the New York's best restaurants: "10 September 1977" which up to now, was the last date France used the guillotine for an execution. It is still available.
