Blackened is a Cajun seasoning ....a mix of paprika, garlic powder, onion powder, black pepper, cayenne pepper, thyme and oregano.....maybe some white pepper and basil as well.

After coating the meat in the spices, it's cooked at a high temp and the spices form a crust.

It's fantastic.

Blackened prime rib is my fav

But blackened shrimp are a close second

Twenty years, for me. Burnt ends are what you seek in KC. Meat candy.

Ask the locals - there are famous places, and then there are where the locals eat. @johnnydawg68 is a KC boy - he should be able to help you out. I don't know what's good now. I ate at Gates (famous place) last time I was there, and I thought it was really good burnt ends on a bun. Ordering is kind of like being at the Varsity in ATL, but the food is much much better. Just eat all the 'cue you can while in town. That's my advice.

Place rated best burger in Houston around the corner from my house. Had the "Grim Burger" today. Includes all homemade mac & cheese, bacon, jalapeño and sunny side up fried egg. Yum! There chips are great and they have there own homemade dressings. Love dipping chips into the homemade ranch.

They were featured on the tv show Diners, Drive-Ins and Dives on the Food Network.
