Cooking fresh black-eyed peas (they're in!) tonight. Of course, you start with bacon. And onions. And some garlic. Bayleaf, chicken stock, cook the onion and garlic in the bacon fat till tender then simmer the peas with the bay leaf and chicken stock. About 45 minutes usually does it right for me.

THIS is what they should look like before you cook them. A beautiful sight. Lord, I do love those fresh field peas. M-M-M...

Make some rice, and some cornbread muffins, eat with the bacon you cooked at the beginning, and anything else you have from the garden. Fresh tomatoes are also in -

Slice 'em, salt and pepper 'em, eat 'em. Noms. That's what I like about the South (US variety).

It had to happen someday, kind of like midget porn or arena football. Colo(u)r me skeptical. (runs to store)

best way / instructions to cook brisket please?

Smoked or roasted? The key is low and slow. The gelatin in the brisket has to just give up, like in a hotpot - basically roasted brisket is hotpot using a brisket.
