It stems from the compensation culture whereby if services aren't perfect then they expect excessive reparations which are simply unnecessary.

A colleague and I bought a few pint from a pub not long ago and they were off; he went on to ferociously complain about the poor service.

I politely asked for another, thank them when I got a different ale and happily drank it. Sorted...

Agree. Although i have some sympathy. I've been out looking forward to a nice night out on the ale in the past, and been served a beer so off that one glug upset my pallet so much that all other beers tasted awful. Ruined the night.
No excuse for a barman to not know the quality of his product.
