Went to a Filipino place once in London (had photos of Pacquiao eating there all over the walls) anyway, had this pork dish in a sauce that was almost black don’t know what it was but it was sensational.
Nearest I’ve had since was a Guyanese pork belly pepperpot made with cassareep but that had a slightly less sweet taste .
