…I remember an old chef telling me that soup in hotels and restaurants is often made from the previous days leftovers. I just hope by ‘leftovers’ they don’t mean ‘left on customers plates’.
I've worked in kitchens of a few Pub chains and can't recall anyone saving anything off a plate to remake meals lol, known a few Waitresses take
