I genuinely can't get my head around why all these states are so slow at counting votes relative to all the others.

I swear barely anything has been counted in the past 48 hours

Are these the states now waiting in on batches of postal votes to arrive? Is that acting as a brake to progressing the count now? I don't know, I'm more asking to see if that's actually the case.

no, iirc they are all still counting the votes sent in up to Election Day

So they are just slow (or thorough) counters?

What is the normal expected date that counts would be made by in the past? I know they don't normally declare it officially much later than now once it's all confirmed and it's usually a case of overwhelming evidence of one candidate winning well before that - but how long can this drag on for? If Trump goes for recounts, etc., gunks up the works if he finds out he has lost, what would that do with the transition to Biden? I sure get the impression that Trump will need dragging out as he hangs on by his finger nails to the front door of the White House when he's due to leave (maybe even literally).
