Even last season mate he started more games at right back than any other spot. Not sure if Spain is like here in terms of a lot of times a young fullback will get minutes on the wing as well.

He played CM early season, but then when the everlasting Jesus Navas retired he often played as a RB, that's correct. 3 at the back is not very common here unlike Italy for example, but versatility is a big topic in youth development that's correct.

He scored 18 goals and 6 assists from midfield last season. Doucs scored 3 and 2 assists.

He is free and I would definitely take him.

Rather have Brownhill than Doucoure. But the problem imo is that I don't think that Longstaff or Brownhill are bad players and would do their job here, but they won't add something to the midfield like for example Luiz.
