If we want to push on then going into another season with only Richarlison, DCL and Tosun up front is a big enough gamble as it is, so adding a player is a fair risk.

Better league, better salary and much more potential here imo. Leipzig will always have that (glass) ceiling above them. In the end we're Premier League and Leipzig are Bundesliga, so there are severe financial boundaries for them. Can't see them getting past Bayern Munich, as where Everton seem to be very determined to make that step up towards the top 6.
