That's what we'd call oeufs en cocotte. Put stuff in with the eggs, cheese, ham, smoked haddock, pour a little bit of cream on top and into oven. Another level.Nah I mean I use a little 1 cal spray first, drop them in, bit of salt, pepper and chilli flakes on top, then stick them in.
You have to do a bit of trial and error on the duration though to keep the yolks runny.
Saw it on a Jamie Oliver programme. Trick is a very hot pan and a bit of olive oil. Couple of eggs whisked in a jug pour in and cook very quickly. 90 seconds to two minutes.Do share. I love omelette but my technique is rubbish!
