I read somewhere each episode costs $6mil to make so if there was a big battle every other week they'd probably go bust.

Every week someone turns up/gets mentioned and I struggle with who they are. Is a "Previously on GoT" too much to ask?

There should be a spin off with The Hound just roaming the land, swearing at everyone and smashing people up in pubs.

I heard once they catch up with the books they'll be carrying on with their own thing. The author gets input apparently but it won't be the same as the books. Not sure how far away that is as I've not read them

Don't really. I've just finished the second book. It takes beards. Each book is 800-900 pages long. That's like 3 normal books each.
