That side on shot of Anderson today was one of the iconic moments of the Tour for me. Burying himself at 60k, he doesn't believe he has a minute on the chase.

"What's the time? TIME??"

I have a resting heart rate of 28 bpm. True story. Do I win?

I assume you it's not because I'm super fit. At all.

To be fair, I think they're just very fit. Doing 4-5 hour rides day after day is perfectly doable with the training these guys do. I remember a bog standard sportive I did a while back in Austria/Switzerland had two climbs (40km between them, one the Stelvio), but then a long flat section before the final climb up to the finish, and there was a group of maybe 20-30 of us on the flat section and we knocked out over 40km in an hour. The peleton draft effect is not to be underestimated, and they'll be doing z2 for most of those times. Their climbing speed, however, is quite remarkable, but again, they have the very best equipment, all the help needed to weigh as little as possible, and get to train on those climbs and at altitude all year round. I'm a 41 year old chugger, and can knock out a VAM of around 1,000 for an hour climb, so world class athletes in their prime doing 1,500 should very much be doable.
