My guess (having never been to this particular Pit) is that you have about four different ones on the table, along with at least two different kinds of slaw to accommodate the different styles of sauce found just in Carolina. In a city as big as Raleigh, you'd best serve everybody who shows up, so you have to keep everybody happy. Don't forget that it's the capital - I assure you they don't.
Eastern NC chopped barbeque is served with a vinegar based sauce. It's not very visible, but it's delightful.
We don't? I don't think it's very much part of the city's identity anymore. The city's identity is more 'part of the massive hodgepodge called the triangle'.
Raleigh? Durham? Chapel Hill? RTP? Cary? All basically the same place, just boroughs of 'The Triangle', at least that seems to be my experience, obviously beyond legal distinctions.
