Looks like chipped/chopped/shredded pork, although once you cut it that small, many meats look similar.
Carolinians serve their pork both chopped and pulled, but almost never sliced. Yes, it matters. You will often eat them with different sauces.
It's outstanding. In the Carolinas, they typically serve it up without sauce but have a variety at the readyThat's what surprised me about RB's picture--where's the sauce? If it's so good you eat it without sauce, it must be great.
