Specifically Belly pork.

Just had some this evening funnily enough. Slowly roasted on a bed of veg for about 4 hours. Fabulous!

Tender, juicy and absolute perfection. And the crackling!!!!!

My mouth is still watering......

Pork is way too dry but i do love the crackling. Chopped pork on butties though is hard to beat.
 
Memphis dry rub (St. Louis cut) pork ribs, slow smoked over a hickory fire. Slightly crunchy on the outside, tender and juicy on the inside, when perfectly cooked you can suck the meat right off the bone. The rub spices blend into the crunchy skin of the ribs. Sticky Fingers is open til 9PM. Gotta go. No, you do not need any sauce with this.

It's proof that God loves us and wants us to be happy. b)
