eggs beat up in a cup (little butter, little white pepper) two warmed through pitta breads. Over did the eggs 30-60 seconds. Close but not quite perfect.

Bubble and Squeak from yesterday’s roast. Made patties, fried in butter and put in the oven for 20 mins. Poached egg on top. Very full!

I'm posting this here but could equally have posted in minor things that make you happy- i made a big lasagna and some fresh bread and all 3 of my boys were at the table (growing up now so not too often).
Lasagna was ace even if I say so myself. I went full classic - took me an hour to finely chop celery, carrots and onions. Italians call this the holy trinity apparently. Anyway, cooked that slowly (3hours) with minced beef and pork etc , classic bechamel sauce and i made the lasagna sheets too. It was a good one and it made me happy to see the lads do it justice. Even forgot today's result for a while.

Had the afternoon off and got Thursday off, otherwise it's a Friday or Saturday meal.

Mind you, I've got a bit of an iron stomach for spicy food, so it doesn't matter too much but I still usually save it for a weekend, just incase.
