Speaking in terms of chemistry, the darker, the more free radicals there are. Free radicals are highly reactive 'molecules' that can react with dna in a mutageneric way. Ie have the potential to cause cancers.

the dripping lake of butter will give me a heart attack long before free radicals can have a go.
