I think you've hit the nail on the head there - Koeman always wants somebody with a proven track record. Otherwise we'd have surely gone for someone like Steve Mounie.

He still might, why stay at club performing at a similar level to us and not being first choice?

..I presume when Koeman spoke to Giroud at the beginning of the window he was given real encouragement that he could sign, albeit in August. Koeman particularly wanted him so waited but it hasn't materialised. Kalinic was next on the list but that also looks unlikely.
