I do make outlines, as few as possible but I do make them - my camera isn't good at picking them up though because they have to be so light so I never film that part. I usually have a few comments telling me I'm 'cheating' because you can see the outlines, but they're just construction lines, I've still drawn them!
Some people say I draw strangely because I start from the eyes and pretty much finish all the layers of detail in them before moving on but, ah, I like it that way!

With art theirs no such thing as a correct way if your talented enough, some of the greatest ever threw out the rulebook, its all about what feels natural for the artist so nice one not changing what obviously works.

Be suprised if no one from the club picks up on this in some way.

I understand what you mean, soft shades are often hard to catch on camera.
You can't really get proportions right unless you use outlines or help lines/guides, it's a step in the process can't imagine serious people considering it cheating.

I have seen a few others working like you with getting the detail in in a portion before moving on. Good for you if you can do that without losing your patience or focus.
You might get advice to change your method, if you do you should ignore it.
